In today’s news, Thailand supports at-risk people of Myanmar, water-related violence around globe worsening according to new report, Taiwan, also known as Formosa, joins growing number of countries banning use of captive wild animal-people for entertainment, Canadian study shows soy milk to be healthier than cow-people’s milk, prominent UK chef converts former chicken-people raising facility into mushroom farm, major hotel chains in China pledge to increase vegan menus by 2025, and driver from South Africa helps rescue baby hare in the nick of time.

Looking for some interesting variety to help give your vegan lifestyle a little pizzazz? Here's a cooking tip for you. Lotus root is a versatile ingredient with a unique shape and texture that is often used in Asian cuisines. To avoid it browning when being cut into slices or sticks, immediately set the cut pieces into cold water for approximately five to ten minutes. You can then bake, boil, steam, and stir fry this wonderful root vegetable for a good source of fiber, and complex carbohydrate fuel that won’t spike blood glucose, as it is a low glycemic index food similar to oatmeal.

Now, it’s time to take the joke of the day by the hand and go for a quick good mood walk. This one’s entitled “Changing Minds.”

Mandy went back to the DVD store and said to the clerk:

“Hi, I bought this workout DVD yesterday because I wanted to get fit. But the program was too hard, so I changed my mind, and I would like to exchange it for this DVD on self-acceptance.”
