Start by adding a cup (200 grams) of vegan chocolate chips and a half cup (120 grams) of vegan whipping cream into a bowl that is microwave safe. Next, microwave at 100% power for a minute. Remove the bowl from the microwave and stir the mixture until the chocolate is completely melted. Then add in a half teaspoon (2.5 milliliters) of vanilla, mix thoroughly and set it aside. With a cake or hand-mixer or manually with a whisk, whip up one and one-half cups (180 grams) of vegan whipping cream until the mixture has a stiff consistency. Put aside one-half cup (60 grams) of this whipped cream. Next, combine the chocolate with the whipped cream by folding it in gently until it’s all evenly distributed. Then put the vegan chocolate mousse into a piping bag fitted with a big star tip and start piping it into serving dishes. When you are done piping out the chocolate mousse, add the whipped cream you previously set aside into a small piping bag that contains a star tip and pipe a little bit on top of each mousse serving.

Lastly, refrigerate the dessert for at least an hour and then it’s ready to enjoy. If you won’t be serving it until later, cover it and leave it in the refrigerator until you’re ready. This recipe makes eight half cup (60 grams) servings.
